Summary

Polyphenols are a diverse group of phytochemicals, comprising thousands of substances. Theυ range from small compounds with a single aromatic ring and one to three hydroxyl groups, to complex structures containing multiple aromatic units. Polyphenols are widely distributed in the plant kingdom, but in animals, they are only detected as metabolites and catabolites of dietary polyphenols. Polyphenolic substances have attracted research interest due to their beneficial implications for human health. However, due to their wide structural diversity, the broad range of plant sources, non-uniform production, complex transformations during food processing, and unresolved mechanisms of metabolism and health effects, significant gaps remain in our understanding of polyphenols. This Special Issue aims to provide comprehensive insights into following topics:

· Diversity of chemical structures and biosynthesis of polyphenols in plants

· Pre-harvest and postharvest factors affecting polyphenolic composition in plants

· The effects of plant polyphenols on human health
