Guadalupe Méndez-Montealvo, Instituto Politécnico Nacional Centro de Investigación en Ciencia Aplicada y Tecnología Avanzada, Unidad Querétaro, México.
Graduated from the Universidad Autónoma de San Luis Potosí with a degree in Food Engineering. In 1994, she obtained a master´s degree in Food Science and Technology and in 2006, a PhD in Food Science, both from Universidad Autónoma de Querétaro, Mexico. In 1996, she joined the Instituto Politécnico Nacional, working at Centro de Investigacion en Productos Bioticos, and later, joined the faculty of the Centro de Investigación en Ciencia Aplicada y Tecnología AvanzadaQueretaro. She did a research stay at INRA-Nantes, France, a sabbatical year, and a two-year Postdoctoral stay in the Department of Food Science at the University of Arkansas. Her research focuses on the study and application of polysaccharides, mainly starch, either as an additive or as a functional ingredient. Dr. Mendez-Montealvo has authored and co-authored 88 scientific papers in international journals with over 2400 citations (H-index 28) as reported in Scopus.

Heidi Andrea Fonseca Florido, Department of Advanced Materials, Research Center for Applied Chemistry (CIQA), Saltillo, Mexico.
Dr. Heidi Andrea Fonseca Florido is a scientific researcher at the Research Center for Applied Chemistry (CIQA) in Mexico. She received her master’s degree in food science and her Ph.D. in Advanced Technology at the Center for Research in Applied Science and Advanced Technology, National Polytechnic Institute. Her research areas involve knowledge of the structure, property, and function relationship of starch; product development and research and technology projects around biopolymers, emphasizing starch and its applications and the design, processing; and functionalization of starch-based biopolymeric blends for food and textile applications. She is a Member of the National System of Researchers in Mexico (SNI 1). Dr. Fonseca has published over 30 scientific papers in international academic journals and some chapter books. She has two granted patents in Mexico related to starch processing.

Carlos José Espinoza-González, Department of Advanced Materials, Research Center for Applied Chemistry (CIQA), Saltillo, México.
He graduated as a Chemical Engineer from the National University of Engineering in Nicaragua in 2005. He developed his Master's and PhD studies in Polymer Technology at the Center for Research in Applied Chemistry (CIQA) in 2008 and 2012, respectively. He has been a researcher in the Department of Advanced Materials since 2014. He has been a National System of Researchers (SNII- I) member since 2017. He is a guest editor for thematic issues in international journals. He is a member of the Editorial Board of several academic journals. He is the leader of the research group on Arid Zone Inspired Biomaterials, which has as research lines the development of new manufacturing processes for the design of encapsulated systems using polysaccharides, desert plant extracts, and agro-industrial wastes. He holds several national patents on encapsulation technologies granted in Mexico (10) and abroad (4). He has led several Science and Technological Development projects financed by Mexican institutions and within the European Cooperation Fund for Science and Technology framework.

Summary

This special issue explores the crucial role of polysaccharides in developing advanced composite materials, covering their preparation, characterization, and diverse applications.


Polysaccharides' renewable and sustainable characteristics have attracted significant attention in materials science because of their unique properties and versatile applications. This special issue seeks to explore the gaps in the field and encourages researchers to contribute Research Articles, Reviews, and Communications addressing these gaps. Examples include, but are not limited to:

· Investigating novel reinforcement strategies to improve composite performance,

· Exploring new applications that leverage the exceptional properties of polysaccharides,

· Characterizing the structural, mechanical, and functional properties of polysaccharidebased composites, and

· Developing innovative processing techniques for polysaccharide-based materials.


This special issue provides a platform for researchers to share their latest findings, methodologies, and insights to advance the field of polysaccharide-based composites and prepare the way for sustainable and innovative material solutions
